Recently I’ve become super into utilizing my freezer.  I took advantage of some good deals and have stocked up on bread and meat for the next two months.  On top of that I ventured into make ahead meals.  I haven’t gotten too bold though, so far I’ve only tried breakfast sandwiches.  I used the muffin tin eggs recipe I keep seeing on Pinterest to make super easy breakfast sandwiches.  Super healthy and took less than 30 minutes.  I call that a win.

Make Ahead Break Sandwiches

Super easy breakfast sandwiches.  Takes less the thirty minutes and you have healthy breakfasts for the whole week!

Make Ahead Breakfast Sandwiches


  • 6 Eggs (can use egg whites)
  • Shredded cheese
  • Spinach
  • Mushrooms and any other veggies
  • English muffins


  1. Fill muffin tin halfway with spinach, cheese, and other veggies.
  2. Crack one egg into each muffin space, mix together using a spoon.
  3. Cook at 350 for 20 minutes or until tester/toothpick removes residue free.
  4. Place one egg muffin in each english muffin and wrap tightly with saran wrap.
  5. Store in freezer until ready to eat. To eat microwave for 30 seconds.

  • I keep seeing these on Pinterest and have been wanting to try them. Now that I know they actually turn out well I’ll have to for sure give them a try

      You definitely should! They are one of the few things from Pinterest I’ve tried that actually turned out as well and as easy as they made it look.

  • I’ve made muffin quiches a couple of times and they are always delicious! I love the idea of putting them in english muffins and freezing them. Do you have to unthaw them before microwaving?

      Nope! I just threw mine straight from the freezer to the microwave and were good to go in around thirty seconds.
