Happy Friday! It has been one super busy week for me, including lots of filming and video editing at work. Unfortunately it didn’t involve a kidney stone passing. Overall the week was enjoyable and I’m super excited for the weekend, especially after last weekend. I wanted to keep today’s post short and simple by sharing a recipe I’ve learned from doing the Whole 30. So far this is the first recipe I’ve cooked more than once. I adjusted it the second time and it was just perfect.

The original recipe came from Practical Paleo (this is an affiliate link, but it is much cheaper on Amazon than in Target). It’s probably my favoritest book ever, seriously, buy it. Every recipe in the book is super simple and delicious. I cooked the asparagus a bit different the second time and added a few things and now it’s perfectly suited to our taste. My favorite part is the ingredient portions are really however much you feel like adding. Not having to measure out ingredients makes cooking a million times more enjoyable.

Lemon Zested Asparagus

Ingredients

  • A bunch of asparagus
  • 3 Tbls. Coconut oil (you can substitute EVOO or melted butter based on your diet)
  • 1 Tbls. Garlic powder
  • 1 Tsp. Black pepper
  • 1 Tsp. Sea salt
  • Zest from one lemon
  • Juice from half of one lemon
  • 1 Tbls. Extra virgin olive oil

Instructions

  1. Heat oven to 375 F.
  2. Cut the stems from your asparagus.
  3. Lay your asparagus out on a baking sheet.
  4. Sprinkle with garlic powder, black pepper and sea salt.
  5. Pour coconut oil over asparagus.
  6. Using tongs, mix the asparagus to evenly cover.
  7. Place in oven for 10 to 15 minutes. Remove once the asparagus is squishy and before the tips are crispy. (Unless you like it crispy, I over cooked it the first time but Carl ended up liking it a bit crispy.)
  8. After removing from the oven, sprinkle with lemon zest, lemon juice and EVOO.

    • Great! I honestly never really had asparagus up until these past few weeks. I definitely like it though. I’m not sure I like it more because of the taste or how easy it is to cook, but either way I’m glad to have it in my life.
