I have to start out by saying I’m ashamed of what I’m about to admit.  I know it’s gross, but…I love mayonnaise.  I mean, just look at it.  It looks disgusting.  But slap some mayo on a sandwich and that’s one sweet delicious sandwich.  I especially love egg salad.  However, it doesn’t take a scientist to tell you how unhealthy it would be to have a lot of mayonnaise in your diet.  Fortunately, there is this great thing called Pinterest.  Heard of it?  Yeah, I thought so.  Thanks to Pinterest, I’ve come across some healthy egg salad recipes that don’t use mayonnaise.  Praise Jesus.

The first recipe comes from Undressed Skeleton and looks incredibly tasty.  This recipe uses less eggs and more veggies to make four tortillas with 1/4 cup serving of egg salad on each.

Healthy egg salad


1 Medium Hard Boiled Egg Chopped
2 Tbsp Chopped Dill Pickle
2 Tbsp Chopped Red Onion
1/3 Cup Cabbage
1/4 Cup Plain Greek Yogurt
1/2 Tsp Paprika
1/2 Tsp Black Pepper
1 Tsp Yellow or Dijon Mustard

Add all ingredients minus eggs and pickles to bowl and mix together.  Then mix in the eggs, followed by the pickles.  Spoon 1/4 of each mixture to each tortilla and top of with some feta cheese.

This next recipe comes from Chicken Recipe Box and is similar to the first recipe but uses more eggs and a few less veggies.

Healthy egg salad

6 hard boiled eggs, chopped
1/2 cup low-fat or non-fat yogurt Greek Yogurt
1/2 cup celery, small chop
2 teaspoons mustard
2 green onions, minced
about 6 pickles, minced
1/2 teaspoon paprika
1/2 teaspoon kosher salt, or to taste
fresh black pepper to taste

Like the first recipe, combine all ingredients and add eggs last.
