So I’ve ventured onto the path of getting healthy.  I blogged about my “attempts” to get healthy over the past year and a half and seeing as I’ve gained 18 pounds over the past 2 years, it’s clearly gone well.  That said, I’m going to clain this for the hundredth time, I’ve finally started getting healthy.  If you follow me on Twitter, you know I’m serious.

See, that was tweeted on the 20th and I’m still going strong (most days). I think what has made the biggest difference is I started tracking what I eat with the My Fitness Pal app on my phone. I’ve managed to track each day for the past two weeks.  I don’t feel like I’m getting any skinnier, but I assume it takes longer than two weeks to lose what took 2 years to gain.  That’s not to say that doesn’t keep me from getting depressed about it, but that’s what I’m telling myself.

The best part about getting healthy is I’m finally cooking again.  If you follow me on Instagram you saw the FANtastic meal Carl and I grilled over the weekend.  We made BBQ chicken wings, lemon pepper zucchini, cucumber salad and cantaloupe.  So. Good.

Zucchini is the way to my heart. (As is most desserts, fast food and generally anything edible.)  I started out following this recipe from The Pioneer Woman, but quickly realized we don’t have a good lemon zester.  So like 90% of the recipes I attempt, I made most of it up.  Surprisingly it ended up well.  This is recipe goes on my list of favorites, not just for flavor, but because it’s nearly impossible to mess up.

Grilled Lemon Pepper Zucchini

Grilled Lemon Pepper Zucchini


  • Zucchini--3
  • Olive oil--1/8 cup
  • Lemon Pepper--1 tbls
  • Zest from one lemon
  • Juice from one lemon
  • Salt and pepper to taste--about 1 tps each


  1. Remove tops and bottom ends the cut zucchini into 4th lengthwise and place in large ziplock bag.
  2. Add remaining ingredients to ziplock bag.
  3. Close tightly and move zucchini around until evenly coated in all ingredients. You can let the zucchini marinate, I cooked them within 5 minutes.
  4. Cook on grill on medium or medium-low heat until done.

There you have it! Super yummy grilled lemon pepper zucchini. Like I said, the best part of this recipe is you really can just throw in what you want. Either way it’s going to turn out ok.  What have you cooked on the grill recently?

      You should! They were so easy to make and so good. What else do you use lemon pepper seasoning for?

  • I can’t get enough of grilled vegetables…so YES! This would be so perfect for a bbq or any type of grilling event where I’m praying for SOMETHING that hasn’t been drenched in bbq sauce, aka LOVE.
