So, I haven’t really been posting recipes on here lately and I really wish that would change.  One day I’ll have the grocery budget to cook blog worthy food, but right now I’ve been keeping things pretty simple in the kitchen.  I wanted to revisit an old recipe that I had on here for all you new readers.  This is the top post from my blog and it sucked to have it blow up big on Pinterest…from before I switched to the new site.  Oh well, that’s how it goes though.  So I thought I’d make it fresh and share it with ya’ll today.

I found the recipe on Pinterest and it was originally done by Best Life 4 Moms. This mom knew what she was talking about when she did this recipe.  The recipe serving size is four, but as you’ll notice, it divides up into individual packets which makes it easily adjusted.  I love that the ingredients can be adjusted to each person’s liking.  For example, I gave myself extra broccoli, cheese, and bacon then I gave Carl extra everything. Here’s the recipe below.

Foil Packet Chicken Deliciousness-Super easy to make with easy cleanup

Foil Packet Chicken Deliciousness 

  • 1 Package chicken flavored stuffing mix
  • 1 1/4 Cups water
  • 4 Boneless skinless chicken breast halves
  • 4 Cups broccoli florets
  • 1 Cup shredded cheddar cheese
  • 4 Slices cooked bacon-crumbled
  • 4 Tblsp ranch dressing

Spray cooking oil on 4 large aluminum foil sheets.  Mix together the water and stuffing mix.  Divide evenly and place a layer on each foil sheet.  Add chicken breast on top of stuffing.  Next layer on broccoli, then cheese, bacon, and ranch evenly over each sheet. Fold aluminum foil into sealed “packet” and place on baking sheet. Cook at 400 F for 30-35 minutes based on size of chicken used.

Are you ready for the final product?  Because I sure wasn’t.  My only wish is that I had added more ranch. Other than that, it was absolutely fantastic. Super easy to make and super delicious to eat.

    Oh wow, that sounds delicious! I’m a little sad that I read your post AFTER coming home from the grocery store today. This one’s definitely going on my recipes-to-try list.

    And I totally hear you on the food budget, I don’t think I’ve cooked anything more interesting than macaroni & cheese (from a box) and hot pockets for at least a few weeks now. Moving to NC (and down to minimum wage jobs) has pretty much devastated our budget for a while.. Phil & I are currently in “survival mode”.

      I feel you, we’ve been in survival mode for months. We’re just now seeing the light at the end of the tunnel. The positive thing about going through this time is I can feed us relatively decently with no budget. It’ll be a good skill even once we can afford a larger budget.
