The moving process has begun!  At least I wish it has.  I haven’t packed a single thing.  I have cleaned up the whole apartment though and thrown away anything that doesn’t need to go to the new place.  My thought is, why pack everything in to boxes when I’m only moving 100 feet away?  It just seems like a waste of time.  I might feel differently when Friday comes and I’m making a billion trips to carry everything over.  Why am I moving just 100 feet away, you ask?  Check out Friday’s Pieces of Happy post and it will be explained.

Easy Breakfast Fruit Bake--Super simple recipe for a healthy breakfast, would taste fantastic on top of yogurt and granola.

Easy Breakfast Fruit Bake


  • Bananas
  • Peaches
  • Blueberries
  • Any other fruit you feel like trying
  • Honey
  • Cinnamon
  • Vanilla extract (optional)


  1. Slice up your fruit and place in a glass baking dish large enough for the fruit to not be laying all on top of each other.
  2. Drizzle fruit with desired amount of honey and cinnamon.
  3. I like it better without vanilla extract but you can try drizzling it with that as well.
  4. Bake for 15-20 minutes at 350.

There you have it!  It’s super easy.  I’ve made it several times and it has turned out great every time.  I’ve tried it with raspberries but the bananas and peaches are definitely the best part.  I think the greatest thing about this recipe is how easy it is to adjust it for how many people you are serving and what fruit you like best.
