I’m gonna be straight up with you guys, I made this recipe about a month or two ago and I’m only sharing it because I’m literally laying in bed right now trying to convince myself that I can pull through this. I am SO SORE. And I’m pretty ashamed. Back when I was dancing all day I loved being sore the next day. Oh to be 20 again. I’ve had a headache all day so I have spent all evening laying in bed not feeling bad that it wasn’t even 8 pm yet. I would however feel bad if I took all this free time and didn’t publish a post, so here it is. I basically took the easy way out and chose the closest to complete post in my drafts. #sorrynotsorry

So here you have it! It’s definitely not a Whole 30 recipe (like this one), but certainly incredibly delicious. The first time I made this broccoli and cheese salad it was gone in a day. Man it was tasty. I don’t know if I can eat it again in good conscience, but I’m sure most of you can!

Broccoli & Cheese Salad // Super simple and super delicous

Broccoli & Cheese Salad

  • 2 Heads fresh broccoli
  • 1/2 Cup chopped red onion
  • Bacon (I just used however many pieces I had available but it really comes down to your preference.)
  • 1 1/2 Cups grated cheddar cheese (You can use pre-shredded, but fresh off the block tastes much better)
  • 2 1/2 Tbls. vinegar
  • 1 Cup mayonnaise
  • 1/3 Cup sugar

  1. Cook bacon and remove excess oil/grease. Tear or chop into bite sized pieces.
  2. Chop broccoli florets into bite sized pieces.
  3. Combine broccoli, bacon, onions and cheddar cheese in a large bowl.
  4. In a separate bowl combine vinegar, sugar and mayonnaise. Pour over broccoli mixture and toss to coat. Cover and refrigerate until serving, though it tastes best after it sits overnight.

P.S. If you like this non Whole 30 recipe, give these a try:

  • Ha! I actually have a similar recipe sitting in my drafts right now… great minds. However, mine doesn’t have cheese in it and I think that cheese would probably be a nice addition because, let’s be honest here, everything tastes better with cheese. Thanks for sharing! Now I want some broccoli.

    • Cheese does make everything better! I would say it’s what I missed most during our Whole 30 (Whole 8) but honestly I missed absolutely everything that was easy and didn’t have to be cooked by me.

  • I have made this a few times already. Mine has bacon in it. Nom nom nom!

    • Nom nom nom is right! I feel un American, but I’m not a huge fan of bacon. I put it in the salad, but mostly for Carl.
